Croquettes

new

  • 1.5 to 2 cups leftover beef, chicken, or turkey

  • 1.25 cups chopped celery

  • 1.25 cups chopped onion

  • 3 tbsp shortening

  • 5 tbsp flour

  • 0.75 cup milk

  • 0.75 tsp Salt

  • 0.25 tsp Pepper

  • Bread crumbs

  • Eggs

  1. Melt shortening then add flour and stir. Add milk, stirring constantly until thick. Season with salt and pepper while mixing. When thick, add meat, chopped onion and celery and mix. Let cool.

  2. Shape into balls. Roll in bread crumbs, then in beat eggs, and again in crumbs. Fry in deep fryer until golden brown.

Original Recipe:

  • 1.5 to 2 cups leftover beef, chicken, or turkey

  • 0.75 cups white sauce

For white sauce:

  • 3 tbsp shortening

  • 3 tbsp flour

  • 0.75 cup milk

  • Salt

  • Pepper

  1. To make white sauce, melt 3 tbsp shortening, add 3 tbsp flour and stir. Add 0.75 cup milk, stirring constantly until thick. Season with salt and pepper while mixing. When thick, add meat, chopped onion and celery and mix. Let cool.

  2. Shape into balls or cones. Roll in bread crumbs, then in beat eggs, and again in crumbs. Fry in deep fryer until golden brown.
